Once the wort is finished boiling, prepare a sanitized vessel (ideally, a bucket) and pump the hot liquid out through the chillers and into the sanitized container. The hot liquid is pumped into the chillers to inoculate the wort with yeast. This will prevent the liquid from turning into a cesspool of bacteria.
Next, check the gravity of the liquid using a hydrometer. Now, water has a gravity of 1.000. If you are going for light beer, the starting gravity of the wort has to be about 1.042.
